Ingredients

14 oz whole peele tomatoes
1 Tbs EVOO
1 Tbs unsalted butter
2 medium cloves garlic (2 tsp)
1 tsp dried oregano
pinch red pepper flakes
large pinch salt
2 six-inch sprigs fresh basil with leaves
1 medium onion, split in half, peeled
1 tsp sugar

Instructions

Process tomatoes in food processor or hand blender until small chunks.
Combine butter/oil in saucepan and heat on med-low. Add garlic, oregano, pepper, salt and stir frequently until fragrant, about 3 minutes.
Add tomato, basil, onion, sugar. Bring to a slow simmer and switch to low heat, reduce by half or for 1 hour, stirring occasionally. Season to taste with salt, remove basil and onion. Cool and store in fridge (covered) up to 2 weeks.
